INGREDIENTS:
2 cups calrose rice
1/3 cup olive oil
1 cup diced carrots
1 cup green pea
1 cup corn kernel
1 cup chicken broth
1 cup hot water
1 cup vegetable broth
2 tsp salt
DIRCTIONS:
PREPARATION
Wash, peel and dice the carrots
Boil a cup of water; add the carrots, green peas, and corn kernels
Bring the vegetables to boil, cook for 5 minutes and drain them
Set aside the drained vegetable broth and the vegetables
Wash and drain the rice
COOKING
Pour 1/3 cup of olive oil into a medium-sized pot
Heat the oil and add the rice
Cook the rice for 7 to 8 minutes at medium heat; stir regularly until grains become slightly translucent
Add drained vegetables, a cup of chicken broth, a cup of hot water, a cup of vegetable broth, and 2 tsp of salt
Give it one good stir to separate any remaining clumps of rice
Cover with a lid; bring the contents to a boil then turn down the heat to the lowest setting
Cook for 20 to 23 minutes, until all the liquid is absorbed
Place a paper towel over the pilav and cover the lid
Let the pilav sit for 12-15 minutes
Before serving, fluff the pilav to release the stream then transfer to the serving plate
SERVING ALTERNATIVES
Vegetable pilav is the most flavourful rice recipe on its own
It is also a perfect side dish for the meatballs, döner, or any meat and poultry dishes

Note: It is recommended that you do not warm the Pilav several times as a whole. It is better to warm up the pilav into a smaller portion size in a separated cup. If you find the recipe is very large for you, then do a half size by decreasing the measurements by half
