Cooking times and Temps
Trim the silver skin and the little fat that was on top and that was it. used olive oil to serve as a binder and seasoned with my JPAP and smoked till that hit about 192 degrees Fahrenheit. Rested for about 30 minutes and sliced them up to serve. Took roughly 3 hours to get done.
The temp on the smoker ran between 275~300 F.

Used one of my own seasonings JPAP on this nice rack and smoked them on a brand new Weber Smokey Mountain 22 inch. Ribs came out so delicious and Tender. Between my rub, the WSM and the nice rack of ribs from B and W Meat co, its no wonder they came out super delicious.
